Tamale Pie with Green Chile

The savory tamale pie comes together quickly for a weeknight meal

Ingredients:
Cornbread:

3/4 cup cornmeal
2 Tbsp. sugar
1 Tbsp. baking powder
1/2 tsp. salt
1 egg
4 Tbsp. melted butter, cooled
1/3 cup milk
14.75 oz can cream style corn
Tamale Pie Filling:
1 lb. lean ground beef
10 oz. Pure Hatch Green Chile Sauce
1 cup El Ranchos De Los Garcias Salsa
1 tsp. Hatch Red Chile Powder
1 1/2 cups colby jack cheese

Directions:
Preheat oven to 400F Grease a cast iron skillet with cooking spray
Whisk together cornmeal, sugar, baking powder and salt
Add egg, melted butter and creamed corn
Pour into skillet and bake 20 minutes, or until a toothpick inserted comes out clean
Remove from oven and set oven to 3550F
Use the handle of a spoon to poke holes all over the cornbread
Pour half of the green chile sauce on top and set aside
In a large skillet brown the beef over medium heat and drain fat if necessary4
Add remaining green chile sauce, salsa and chile powder.
Bring to a boil and simmer uncovered until thickened about 5 minutes
Spread beef over cornbread, top with cheese and bake until cheese is bubbly about 20 minutes
Allow to stand 5 to 10 minutes, serve with salsa, cilantro, and sour cream
