Stacked Chicken and Green Chile Enchiladas

12-16 corn tortillas
2 Tbsp. corn oil or lard
1 whole chicken, cooked, meat removed
1 cup heavy cream
1/4 cup garlic, minced
1 onion, diced
1 cup chicken stock
1 cup Santa Fe Seasons Flame Roasted Hatch Green Chile
1 lb. cheddar cheese, shredded

Flash fry the tortillas in the oil, set aside
Add the onion and garlic and cook on medium heat until translucent, about 2 minutes
Add chicken stock, heavy cream and green chile. Simmer 5 minutes until slightly thickened
Add chicken and stir to combine
In a greased casserole dish, alternate layers of tortillas, sauce and cheese
Bake uncovered at 375F for 25 minutes
