Savory Cornmeal Waffles with Green Chile and Sausage Gravy

1 1/4 cups flour
3/4 cup cornmeal
2 Tbsp. sugar
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 eggs
1/2 stick butter, melted
1 1/2 cups buttermilk
green chile sausage gravy:
1/2 lb. ground breakfast sausage
2 Tbsp. flour
1 1/4 cups milk
1/2 cup Santa Fe Ole Roasted Hatch Green Chile
salt and pepper to taste

prepare the waffle batter:
Combine dry ingredients, add eggs, melted butter and buttermilk. Whisk to combine
Set aside and prepare the gravy
In a medium sized sauce pan on medium-high heat, brown the sausage
When sausage is browned, stir in the four and cook until slightly browned
Add milk and whisk until gravy is smooth. Bring to a boil and lower to a simmer
Add green chile and season to taste with salt and pepper
Reduce heat to a simmer and stir occasionally while cooking the waffles
Add additional milk if the gravy becomes too thick
Cook waffles and serve with the gravy on top. Add an egg if you like
