Salsa Verde with Hatch Green Chile

Try this smoky salsa verde with tortilla chips or on your favorite tacos


10 tomatillos, cleaned and de-husked
1 jar Santa Fe Ole Roasted Hatch Green Chile
1 yellow onion, quartered
1 bulb garlic, halved horizontally
olive oil
1 bunch cilantro leaves
water to thin
salt and pepper to taste


Preheat oven to 425
Place tomatillos, onion and garlic on a baking tray, drizzle with olive oil and bake until well charred, 20-30 minutes
Allow to cool, peel garlic and place vegetables and cilantro in food processor or blender and puree until smooth
Add water if needed to create a smooth consistency and season with salt and pepper
Serve with Lil Kristi's Tortilla Chips or on top of your favorite tacos
