Roasted Corn and Green Chile Grits

1 Tbsp. olive oil
1 cup corn kernels
1/4 cup Santa Fe Seasons Roasted Hatch Green Chile
1 shallot, diced
2 cloves garlic, minced
1/2 cup corn grits
1 Tbsp. butter
1 cup half and half
salt and pepper to taste

Add oil to a wide saucepan on medium heat. Add green chile and shallot. Cook 1-2 minutes,
Add corn and allow to cook 1-2 minutes before stirring. Add garlic and cook an additional 3 minutes
Pour half and half into in the pan. Stir, scraping the bottom of the pan
Add butter and bring to a boil, then lower to a simmer
Add grits and cook, stirring frequently for 5 minutes, stirring constantly
Continue cooking until grits are tender and creamy. Serve hot
