  • Red Chile Shrimp

    Ingredients:
    4 Hatch Red Chile Pods
    3 Los Chileros Chipotle Chile Pods
    2 small tomatoes, quartered
    1/2 onion, roughly chopped
    1 garlic clove
    2 Tbsp. canola oil
    2 lbs. large shrimp, peeled and deveined

    Directions:
    Place the dried chiles in a medium bowl and cover with boiling water.
    Set aside for 20 minutes, until chiles are softened.
    Transfer chiles and 1/2 cup of the soaking liquid to a blender.
    Add tomatoes, onion, garlic and salt and puree until smooth.
    Taste for seasoning and add salt if needed.
    Heat canola oil in a large skillet over medium-high heat and cook shrimp until just cooked through, about 1 1/2 minutes on each side.
    Add chile puree to the pan and reduce heat to medium.
    Simmer about 5 minutes, until sauce is hot and bubbly.
    Serve immediately.
