This creamy dip is great for a crowd and comes together in just a few minutes.
2 Tbsp. olive oil
1/2 medium onion, minced
4 garlic cloves, minced
1 Tbsp. flour
1 15oz. can evaporated milk
1/2 cup monterey jack cheese, shredded
1/2 cup sharp cheddar cheese, shredded
1/2 cup half and half
1 1/4 cups Santa Fe Seasons Roasted Green Chile, drained
1/4 cup chopped cilantro
Salt & Pepper to taste
Saute onion and garlic in olive oil until softened, about 5 minutes.
Sprinkle with flour and cook another 2-3 minutes.
Add evaporated milk and cook until thickened, 3-5 minutes.
Add cheese and stir until combined. Add half and half a little at a time until you reach your desired consistency.
Add green chile and continue to cook on medium high heat until heated through.
Season to taste with salt and pepper and garnish with chopped cilantro.
