Oaxaca and Green Chile Grilled Cheese

4 Tbsp. olive oil
1/4 cup Bossy Gourmet Hatch Green Chile
1 medium onion, diced
8 slices of bread
12 oz. Oaxaca cheese, sliced
1/4 cup mayo
2 tsp. chipotles in adobo

Puree together mayo and chipotle until smooth, set aside.
Sauté onion in 2 tablespoons of olive oil until translucent, 2-3 minutes.
Add green chile, salt and pepper. Cook on low heat 5 minutes to meld flavors.
Brush four slices of bread with olive oil and place in a skillet oiled side down.
Layer cheese on bread and top with chile/onion mixture.
Slather a second slice of bread with the chipotle mayo.
Top the cheese and chile mixture with the second piece of bread, olive oil side facing up.
Grill until browned on both sides and cheese is melted.
