New Mexican Meatloaf with Green Chile

1 1/2 lbs. ground beef
1 8 oz. can tomato sauce
1 cup Colby Jack cheese, shredded
1 cup finely crushed tortilla chips
1/2 yellow onion, diced
2 eggs
4 oz. Santa Fe Ole Roasted Hatch Green Chile
1 Tbsp. chile powder
1/2 tsp. salt

Preheat oven to 375 degrees F
Combine ground beef, half of the tomato sauce, half of the cheese in a large bowl
Add tortilla chips, onions, eggs, green chile, chili powder and salt, Mix well
Add to an 8x4 loaf pan and bake 1 hour.
A thermometer inserted into the center should read at least 160 degrees F
Pour remaining tomato sauce over meatloaf and sprinkle remaining cheese on top
Bake until cheese is melted, about 5 minutes.
