Lobster and Green Chile Mac N Cheese

2 cups elbow macaroni
3 Tbsp. butter
2 shallots, finely chopped
3 Tbsp. flour
2 cups whole milk
1/2 cup heavy cream
2 tsp. dijon mustard
8 oz. white cheddar, shredded
4 oz. Gruyere cheese, shredded
2 cups sharp cheddar, shredded
1 1/2 cups Santa Fe Seasons Flame Roasted Hatch Green Chile
1 Tbsp. chives, chopped
2 medium lobster tails, cooked and diced
salt and pepper to taste

Preheat oven to 350 degrees F
Bring a large pot of salted water to a boil. Add pasta and cook according to package directions
Drain and return to the pot.
Melt butter over medium heat in a large saucepan.
Once melted, add shallots and sauté until soft
Add flour and stir for 1 minute until combined
Whisk in milk and bring to a low boil, whisking constantly
Add cream and dijon, both cheese and season with salt and pepper
Remove from heat and continue stirring until cheese is melted
Mix in pasta and lobster tails. Stir to combine and pour into a large baking dish
Bake until golden brown on top, 20-25 minutes
