Iced Honey Lavender Latte

1/2 cup B's Honey
1/4 cup water
1 tsp. Frolicking Deer Culinary Lavender
2 tsp. lavender simple syrup
3 oz. espresso or 1/2 cup extra strong coffee
1/2 cup milk

To make the simple syrup, combine honey, water and lavender in a small saucepan over medium-high heat.
Simmer, stirring occasinally until honey is dissolved.
Remove from heat and allow to cool completely. Strain using a fine mesh strainer to remove lavender buds.
To make the latte, pour 2 teaspoons of the lavender syrup into a tall glass.
Add espresso and stir to combine. Fill the glass with ice and pour in milk to the top of the glass.
Stir to combine and serve.
