Honey Lavender Granola

2 cups old fashioned oats
1/3 cup almonds, finely chopped
1/4 cup coconut flakes, unsweetened
2 Tbsp. brown sugar
/4 tsp. salt
1/4 cup honey
1/3 cup coconut oil, melted and cooled
1 egg white, beaten
1 tsp. vanilla
1 1/2 tsp. Frolicking Deer Culinary Lavender, finely minced

Preheat oven to 275 degrees F.
Combine oats, almonds, coconut flakes, sugar, lavender and salt in a large bowl.
In a medium sized bowl, combine coconut oil, honey and vanilla. Whisk until combined.
Add wet ingredients to dry. Folding ingredients together with a spatula.
Whisk the egg white until frothy and fold into the granola mixture.
Spread onto a parchment lined baking sheet.
Bake 45-50 minutes, stirring every 15-20 minutes.
Granola is done when it is fully dried, but not yet crisp.
Allow to cool completely and store in an airtight container.
