  • Hatch Green Chile Sauce

    Ingredients:
    3 Tbsp. cooking oil
    1 small onion, diced
    3 cloves garlic, minced
    2 Tbsp. flour
    1 1/2 cups Hatch Chopped Green Chile
    2 cups chicken stock
    salt to taste
    1/2 tsp. cumin
    1/2 tsp. Los Chileros Mexican Oregano

    Directions:
    In a skillet over medium heat, add cooking oil, onion and garlic.
    Cook for 5 minutes or until soft and translucent.
    Add flour, stir for 1- 2 minutes, you do not want your flour to burn.
    Add 1 1/2 cups chopped green chile and chicken stock.
    Optional- 1/2 tsp of ground cumin or a pinch of Mexican oregano or both.
    Bring chile to a boil and then turn burner down, cover chile with a lid and simmer on low for 15-30 minutes.
    You can blend you green chile for a smoother texture.
