Hatch Green Chile Queso

2 Tbsp. butter
3 garlic cloves, minced
2 Tbsp. flour
1 cup milk
1/2 cup Santa Fe Ole Roasted Hatch Green Chile
1/2 tsp. salt
1/4 tsp. cumin
pinch cayenne pepper
1 cup Monterey Jack cheese, shredded
1 cup cheddar cheese shredded
garnish: additional green chile, chopped cilantro and green onion

In a skillet, melt butter over medium-high heat. Add garlic and stir, cooking 1-2 minutes
Sprinkle flour over the melted butter and whisk to make a paste
Cook 1-2 minutes, then slowly whisk in milk. Add green chile, salt and spices
Allow to come to a gentle boil, whisking frequently until slightly thickened
Reduce heat to low and add cheese. Stir until smooth. Garnish and serve with chips
