2 lbs. Yukon potatoes, peeled
3 large cloves garlic
4 oz. Santa Fe Seasons Roasted Hatch Green Chile
1/2 cup milk
4 Tbsp. butter
1/4 cup ranch dressing
1/2 cup Parmesan cheese, shredded
1 cup cheddar cheese, shredded
Preheat oven to 350 degrees
Place potatoes and garlic in a large pot, cover with water and boil until tender, drain
In a bowl, add potatoes and garlic, milk, butter and ranch dressing.
Mash until potatoes are creamy but still a little chunky. Season to taste with salt and pepper
Add 1/4 cup of parmesan and 1/2 cup of the cheddar cheese
Transfer potatoes to a baking dish and top with remaining cheese.
Bake 10-15 minutes, until potatoes are heated through and cheese is melted.
