Hatch Green Chile Hollandaise

Add a Southwestern flair to any egg dish


2 cups Santa Fe Ole Hatch Green Chile
2 Serrano chiles
1 Tbsp. apple cider vinegar
juice of 1/2 lemon
4 egg yolks
1/2 bunch cilantro, chopped
4 sticks butter, room temperature
salt and pepper to taste


Char the serrano peppers on stovetop until skins are completely blistered
Peel, seed and chop chiles and set aside
Combine vinegar, lemon juice and egg yolks in a double boiler over medium heat
Whisk together until well combined. Add butter gradually whisking constantly until heated through and well combined
Stir in chiles and cilantro
Serve with your favorite egg dish
