Hatch Green Chile Cornbread Dressing

Green chile is the perfect addition to this savory cornbread dressing


2 - 8 inch pans of cornbread, cubed
1 stick unsalted butter
1 yellow onion, diced
2 stalks celery, diced
14 oz. Italian sausage, bulk
1 cup Santa Fe Seasons Hatch Roasted Green Chile
1 Tbsp. fresh thyme, chopped
2 cups chicken broth
2 eggs


Preheat oven to 375 degrees. Butter a large baking dish
Spread the cubes of cornbread on a baking dish and toast in the oven, stirring occasionally until dried and golden brown, about 20 minutes
Heat the butter in a skillet on medium heat. Add onions and celery and cook until soft and golden about 10 minutes
Add chile, sausage and thyme and cook until heated through, about 5 minutes
Add cornbread, toss to combine and season with salt and pepper
Whisk together chicken broth with eggs and pour over cornbread mixture. Stir to combine
Transfer to baking dish and cover with foil. Bake 1 hour. Remove foil and bake an additional 15 minutes until golden brown on top.
