Hatch Green Chile Borracho Beans

Serve these borracho beans over rice, in burritos or as a side

Ingredients:

1 lb. dry pinto beans, picked through and rinsed
1 12 oz. Mexican lager beer
6 cups water
8 oz. bacon, diced
1/2 jar Santa Fe Ole Hatch Roasted Green Chile
2 onions, diced
2 jalapenos, seeded and diced
4 garlic cloves, minced
2 tsp. ground cumin
1 tsp. Chimayo Pure Red Chile Powder
1 tsp. Los Chileros Mexican Oregano
1 tsp. ground coriander
2 bay leaves
1/2 cup chopped cilantro
2 green onions, thinly sliced

Directions:

Place beans in crockpot. Add beer and water.
Cook bacon in a large frying pan on medium heat until crisp
Transfer to a paper towel lined place to cool
In the same pan add vegetables to the pan and cook on medium heat until soft
Add cumin, chili powder, coriander, oregano and bay leaves and cook 2-3 more minutes to toast the spices
Add bacon, vegetables and green chile to slow cooker and cook on low about 4 hours, until beans are tender
Once beans are cooked, season to taste with salt and garnish with cilantro and green onions
