Hatch Green Chile and Tomato Soup

2 Tbsp. olive oil
2 Tbsp. butter
1 onion, diced
1/2 tsp. dried basil
1/2 tsp. dried oregano
1/2 tsp. dried thyme
1/2 tsp. smoked paprika
3 garlic cloves, minced
4 oz. Santa Fe Ole Hatch Green Chile
2 Tbsp. tomato paste
2- 28 cans diced tomatoes
3-4 cups chicken stock
1 cup sour cream

In a heavy soup pot, heat olive oil and butter over medium heat. Add onion and cook til softened, about 5 minutes
Add spices and garlic, cook for another minute. Add green chile and tomato paste, stir to combine
Cook another 5 minutes and add tomatoes and stock. Stir and cook and simmer 45 minutes
Use and immersion blender, or use a regular blender in batches, to blend until smooth
Add more stock if needed to get your desired consistency. Stir in sour cream and serve with your favorite sour cream
