Hatch Green Chile and Corn Fundido

Green Chile and charred corn give this fundido a great smoky flavor

Ingredients:
1 Tbsp. butter
2 cups corn kernels
1 small onion, diced
1 jalapeno, seeded and diced
1/2 red bell pepper, diced
1 cup Santa Fe Seasons Flame Roasted Green Chile
1/2 Monterey Jack cheese, shredded
1 Tbsp. mayo
1 Tbsp. lime juice
salt and pepper to taste
cilantro, chopped for garnish

Directions:
Melt butter in a heavy skillet and add corn, onion, jalapeno and red bell pepper
Cook on med/high until vegetables are slightly charred
Mix in the cheese, mayo, lime juice salt and pepper and cook on medium heat until melted through
Garnish with chopped cilantro and serve warm with Miss Kristy's tortilla chips
