Hatch Green Chile and Chorizo Quiche

This quick and easy quiche makes a great breakfast or lunch

1 pie crust
1/4 lb. chorizo
1 cup Santa Fe Seasons Hatch Green Chile, drained
1/3 cup green onions, chopped
1/4 cup chopped cilantro
5 eggs
1 1/2 cups half and half
1 cup pepper jack cheese, shredded
1 cup cheddar cheese, shredded
salt and pepper to taste

Preheat oven to 350F
Remove the chorizo from the casing and brown in a skillet until crumbly and cooked through
Layer the chorizo, cheeses, green chile, cilantro and green onions in the pie shell
In a bowl, beat the eggs and half and half, season with salt and pepper and pour into the pie shell
Bake about 1 hour until center of quiche is set
