Hatch Green Chile and Chorizo Bake

Layers of flavor with green chile and chorizo creates a warm and comforting dish


1/2 cup Santa Fe Ole Hatch Green Chile
1/2 Tbsp. vegetable oil
3 stalk green onion, chopped
2 garlic cloves, minced
1 small tomato diced
6 oz. Mexican chorizo, casing removed
2 eggs
1/2 cup milk
1/2 Tbsp. paprika
1/2 tsp. Chimayo Chile Powder
salt and pepper to taste


Preheat oven to 350 degrees
Heat oil in a skillet on medium heat. Add onion and garlic and cook until softened
Add chorizo, tomato and green chile. Cook thoroughly, set aside
Whisk eggs, milk and spices in a bowl and set aside
In a casserole dish, layer chile and chorizo mixture and cheese, top with egg mixture
Bake 25-30 minutes, until eggs are set
