Hatch Green Chile and Cheese Scones

These savory scones a great for a fancy brunch

Ingredients:
2 oz. cheddar cheese, shredded
2 oz. Fontina cheese, shredded
2 oz. Santa Fe Ole Hatch Green Chile, drained
2 1/4 cups flour
1 tsp. baking powder
1 tsp. salt
1 tsp. sugar
8 Tbsp. butter, cold cut into cuber
1/2 cup + 3 Tbsp. heavy cream
1 egg, whisked, for egg wash on top

Directions:
Preheat oven to 375F
Whisk together flour, baking powder, salt and sugar
Using a pastry blender or your fingers, work the butter into the flour mixture until it resembles coarse crumbs
Add both cheeses and flour and stir to combine
Add the green chile and stir to combine
Stir in the cream until just moistened
Turn out onto a floured surface, bring dough together and pat it out
Fold on itself and roll it out gently 3 times to create layer
Form into a disc and roll out into a circle about 1 inch thick
cut into 8 wedges, place on a baking sheet with parchment paper
Brush the tops of the scones with the whisked egg
Bake 18-20 minutes, or until tops and bottoms are golden brown
