Green Chile Stuffed Meatballs

Serve these savory meatballs as an appetizer or with rice as a entree


1 lb. ground beef
4 oz. Santa Fe Ole Hatch Roasted Green Chile
1/2 cup breadcrumbs
1 egg
1 tsp. Mexican oregano
1/2 tsp. cumin
8 oz. pepper jack cheese, cubed
1 jar Hatch Chile Verde


Preheat oven to 425 degrees
In a large bowl, mix together ground beef, green chile, bread crumbs, egg and spices.
Form your meatballs and press a cube of jack cheese into each one.
Place the meatballs in a 9x9 baking dish and cover with chile verde sauce.
Cover with aluminum foil and bake at 350 for 30 minutes. Remove the foil and cook uncovered 5 minutes more.
