  • Green Chile Sausage Gravy

    Ingredients:
    1 lb. hot breakfast sausage
    4 oz. Santa Fe Ole Hatch Green Chile
    1 tsp. black pepper
    1/4 tsp. red pepper flakes
    1/3 cup flour
    1/2 cup half and half, room temperature
    2-3 cups whole milk, room temperature
    salt to taste

    Directions:
    Heat a large non-stick skillet over medium high heat
    Add sausage, break into small crumbles with a wooden spoon and cook 6 minutes
    Stir in green chile, black pepper and red pepper flakes, cook 3-4 minutes
    Reduce heat to medium low and sprinkle in flour. Stir to combine and cook 1 minute
    While stirring, slowly add half and half
    Stir in 2 cups of milk and reduce heat to low. Simmer 8-10 minutes, stirring frequently
    Add additional milk to reach desired consistency. Add salt to taste
    Serve over biscuits or your favorite breakfast burrito
