Green Chile Rice

1/2 cup Santa Fe Ole Roasted Hatch Green Chile
1/2 cup chopped cilantro
1/3 cup diced yellow onion
3 cloves garlic
2 Tbsp. vegetable oil
1 1/2 cups white rice
2 1/4 cups chicken broth
1 tsp. salt
2 tsp. lime juice

Add green chile, cilantro, onion and garlic to a blender and puree until smooth
Heat oil in a large sauté pan over medium heat. Add rice and cook 5-7 minutes, until rice start to brown
Add pureed green chile, chicken broth and salt. Stir to combine and bring to a boil
Reduce heat to a simmer. Cover and cook on low 15 minutes, or until rice is tender and liquid is absorbed
Remove from heat and let stand uncovered 5 minutes. Fluff with a fork, mix in lime juice and to with additional cilantro to garnish
