  • Green Chile Refried Beans

    Ingredients:
    2 cans 15.5 oz. pinto beans, drained and rinsed
    2 Tbsp. vegetable oil
    1/2 yellow onion, finely diced
    2 garlic cloves, minced
    4 oz Santa Fe Ole Hatch Green Chile
    1 tsp. cumin
    1/2 tsp. Hatch Green Chile Powder
    1 tsp. salt
    1/2 cup chicken broth

    Directions:
    Drain and rinse pinto beans, set aside
    Heat oil in a large pot over medium heat
    Add onion and garlic and cook until onion is translucent, about 3 minutes
    Add green chile, cumin, green chile powder and salt. Stir to combine and cook until fragrant, about 2 minutes
    Add beans and stock. Simmer over medium heat 15 minutes for the beans to soften and begin breaking down
    Mash the beans with a potato masher to your desired consistency. Add more stock if needed to make them smoother
    Serve warm with chopped cilantro and crumbled cotija cheese to garnish
