Green Chile Potatoes Au Gratin

As the cool weather approaches, these potatoes make a great side dish

Ingredients:

3 Tbsp. butter
3 Tbsp. flour
2 cups milk
1 cup cheddar cheese, shredded
1 1/2 cups Santa Fe Ole Hatch Roasted Green Chile, drained
5 cups Idaho potato, thinly sliced
1/2 cup onion, diced
Salt & Pepper to taste

Directions:

Preheat oven to 350 and grease a 2 qt. baking dish
In a large saucepan, melt butter over low heat. Add flour and cook on low heat about 5 minutes
Add milk, increase heat to medium and cook about 5 minutes, until thickened
Add cheese, green chile, potatoes and onion. Stir to combine and pour into baking dish
Cover with foil and bake at 350 for 1 hour. Remove foil and bake an additional 20-30 minutes, until potatoes are tender.
Allow to rest 5 minutes and serve.
