Hatch Green Chile Pesto
2 cups Santa Fe Seasons Roasted Hatch Green Chiles
1 large bunch cilantro, stems removed
2 Tbsp. fresh lime juice
1 cup pine nuts or walnuts
1/2 cup olive oil
4 garlic cloves, peeled
1 cup parmesan cheese, shredded
salt and pepper to taste
In a blender or food processor, combine green chile, cilantro, lime juice, nuts and garlic.
Blend on medium speed and drive in olive oil until smooth.
Add parmesan and pulse to combine. Add salt and pepper to taste.
