Green Chile Enchilada Soup

Serve this simple but flavorful soup with warm tortillas on the side

1 can cannellini beans
2 cans black beans
1 lb. chicken thighs, boneless and skinless,
2 cans fire roasted diced tomatoes
1 jar Fresh Chile Company Red and Green Blend Chile Sauce
4 tsp. chili powder
1 Tbsp. ground cumin
3/4 tsp. paprika
1 cup chicken broth
1 8 oz. package cream cheese, full fat
garnishes, chopped cilantro, sour cream chopped avocado, fresh lime juice

Drain and rinse beans and add to slow cooker
Add chicken, red and green chile sauce and all the seasonings
Pour in chicken stock and cook on low 5-7 hours or on high 3-5 hours
Remove the chicken and shred in a bowl
Add softened cream cheese to the slow cooker and cook on high 30 minutes until cheese melts
Whisk to incorporate cheese and add chicken, stir to combine
Season with salt and pepper and top with garnishes
