Green Chile Chimichurri Recipe
4 oz. Roasted Hatch Green Chile from Santa Fe Seasons
1 bunch cilantro, stems removed
5 cloves garlic, peeled
juice of 1 lime
1/4 cup olive oil
salt and pepper to taste
Blend chile, cilantro, garlic and lime juice in a food processor or blender.
Add olive oil slowly while blending until mixture reaches a sauce consistency.
Season with salt and pepper. Serve with pasta dishes, over chicken or fish.
