Green Chile Bisque

This creamy soup is perfect for cool fall nights


1 jar Santa Fe Ole Hatch Roasted Green Chile
1 large yellow onion, chopped
2 tsp. olive oil
3 cloves garlic, minced
4 cups chicken stock
2 cups heavy cream
salt and pepper to taste
Shredded cheddar cheese and chopped cilantro to garnish


In a large soup pot, cook onion and garlic on medium heat, until soft
Add green chile and chicken broth
Bring two a boil and simmer ab out 20 minutes
Puree soup in batches in the blender or use and immersion blender to puree til smooth
Return to the pot and add heavy cream and season to taste
Simmer about 10 minutes until thickened and heated through
Garnish with cheese and cilantro
