Green Chile Apple Pie

Ingredients:
6-8 tart apples peeled cored and sliced
3/4 cup sugar
dash salt
2 Tbsp all-purpose flour
1 tsp ground cinnamon
dash of ground nutmeg
prepared pastry for 2-crust 9-inch pie
1 cup Chopped Hatch Green Chile
3-4 pats of butter
egg wash (1 egg + 1 Tbsp. milk whisked together)
sugar and cinnamon to sprinkle on top

Directions:
Preheat oven to 400 degrees.
Combine sugar, flour, and spices, and mix with apples.
Stir in green chile.
Line a 9-inch pie plate with pastry.
Fill with apple mixture and top with butter.
Unroll second pastry on top and seal the edges.
Cut some vents into the top.
Brush with egg wash and sprinkle with cinnamon and sugar.
Bake at 400 degrees for 50 minutes or until brown and bubbly. Cover edges halfway through with aluminum foil if they are getting too brown.
Remove from oven, rest for about 10 minutes to firm up a bit, then serve.
