Elote and Hatch Green Chile Quiche

1 prebaked pie crust
3 ears of corn, shucked
1/2 cup Santa Fe Seasons Flame Roasted Hatch Green Chile, drained
1/2 cup green onion, chopped
1/4 cup cotija cheese, shredded
1 tsp. vegetable oil
5 eggs
1 cup milk
1/4 cup cotija cheese, shredded
2 Tbsp. flour
1 Tbsp. dried oregano
1/2 tsp. sugar
1/2 tsp. ground coriander
1/8 tsp. nutmeg

Preheat oven to 350F
Warm a heavy pan on med-high heat and grill the corn until slightly blackened on all sides
Remove to a cutting board and allow to cool. Slice the corn off the cobs and arrange in an even layer in the pie shell
Add 1/4 cup cotija cheese and mix it into the corn. Top with green chile and green onion
In a medium bowl, whisk together remaining ingredients and slowly pour the filling over the vegetable in the crust
Bake 25-30 minutes or until center is firm to the touch
