  • Chimayo Red Chile Sauce (Ingredients)

    Ingredients:
    4 Tbsp. vegetable oil
    2 cloves garlic, minced
    1/3 cup onion, finely chopped
    3 Tbsp. flour
    3/4 cup Chimayo Pure Red Chile Powder
    3 cups water
    1 tap. salt
    1/2 tsp. cumin
    1/2 tsp. Los Chileros Mexican Oregano

    Directions:
    Heat the vegetable oil over medium heat. Once hot, add garlic and onion.
    Cook about 3 minutes, until onion is translucent.
    Whisk in flour and cook 2 minutes, whisking frequently.
    In a large bowl, whisk together chile powder and water.
    While whisking the flour mixture, slowly add the red chile and water mixture.
    Whisk until smooth and bring to a simmer. Continue cooking over medium-low heat until thickened, about 5 minutes, stirring frequently.
    Once sauce has thickened, add cumin and oregano and simmer another 3 minutes.
