Chimayo Chile Honey Wings

Sarah and Melissa at our Taos store created the recipe for these smoky, sweet wings!


1 1/2 oz. Chipotle Olive Oil

3 tsp. Chimayo Chile Powder (mild)

1 tsp. kosher salt

Spice Rub:

1 tsp. garlic powder

1/8 tsp. cumin

1 pinch Los Chileros Mexican Oregano

Honey Sauce:

8 tsp. Mesquite Wildflower Honey

4 tsp. spice rub

to finish:

Los Poblanos Oaxacan Salt


Coat wings with Chipotle Oil and Chimayo chile powder and massage in the spice rub. Marinate 1-2 hours

Grill on indirect heat at about 275 F for 30–45 minutes until cooked through

Glaze with honey sauce the last 5-10 minutes

Finish with a pinch of Oaxacan salt and serve
