Chicken and Green Chile Chimichangas (Direction & Ingredients)

Serve these tasty chimichangas with rice and beans or a salad

8 oz. Santa Fe Ole Roasted Hatch Green Chile
1/2 tsp. ground cumin
1/4 tsp. oregano
1 tsp. crushed red pepper flakes
2 cups chicken, shredded
3/4 cup cheddar cheese, shredded
1/3 cup yellow onion, diced
4 Tbsp. olive oil
6 flour tortillas, 8 inch
shredded lettuce, pico de gallo, guacamole, sour cream

Preheat oven to 400F
In a large bowl, mix chicken, green chile, cumin, oregano, cheeses, crushed red pepper and onion
Place about 1/2 cup of the chicken mixture on each tortilla
Fold in the sides about 1 inch, just covering the filling and roll up from the bottom
Brush the seam side with a little butter and place on a baking sheet seam side down
Repeat with remaining tortillas. Brush the tops with butter and bake until golden brown, 20-25 minutes
Garnish and serve warm
