Cheesy Hatch Green Chile Hashbrowns

Serve these crispy cheesy hash brows with your favorite egg dish

3 russet potatoes
1/3 cup flour
1 egg
3/4 cup cheddar cheese, shredded
1/2 cup Santa Fe Ole Hatch Green Chile
salt and pepper to taste

Bring a pot of water to a boil, add potatoes and boil for 6 minutes
Drain potatoes and rinse with cold water until cool enough to handle
Grate the potatoes and add them to a medium sized bowl
Add flour, egg, cheese and green chile, season to taste with salt and pepper
Use a greased 1/3 cup measuring cup to portion the mixture into patties
Heat a few tablespoons of oil in a large skillet on high heat
Add the hash browns to the skillet in batches, cooking about 3 minutes
on each side until golden brown
Transfer to a paper towel to drain excess oil and serve
