Caramelized Onion and Lavender Quiche

1 unbaked 9-inch pie shell
2 large eggs
1/2 cup heavy cream
2 cups caramelized onions
4 oz. bacon, diced, cooked and drained
2 tsp. Frolicking Deer Culinary Lavender
4 oz. gorgonzola cheese, crumbled

Preheat oven to 400 degrees F. Bake the pie shell 12-15 minutes, until golden. Cool
Whisk eggs and cream in a medium bowl. Add onions and bacon
Stir to combine and pour the mixture into the baked pie crust. Sprinkle with lavender and blue cheese
Reduce oven heat to 350 degrees F and bake 20-30 minutes, until just set in the center
Let rest 10 minutes before serving
