Just discovered Prickly Pear Syrup.
Used this syrup to make a delicious citrus sauce for salmon and it was so "gourmet". Used a recipe by Lois Ellen Frank and Walt Whitewater videotaped at this year's virtual Prickly pear Festival. The sauce is simply fresh orange juice, lemon juice, butter and prickly pear syrup. Yum! I hear it's also good in cocktails and on fruit or pancakes. Try some--goes a long way.

I've just tried it on ice cream and pancakes so far. It is a wonder, did not expect it to be so delicious. It is a beautiful color; can't wait to try it on waffles. This is a great find.
