Squash and Hatch Green Chile Casserole

Ingredients:
6 medium squash, sliced
1 yellow onion, sliced
1/4 cup butter
1/2 cup parmesan cheese, grated
1 cup cheddar cheese, shredded
1/2 cup sour cream
1 cup Santa Fe Ole Hatch Green Chile
topping:
1/4 cup breadcrumbs
1/4 cup parmesan cheese, grated
1 Tbsp butter, melted
parsley to garnish
Directions:
Preheat oven to 350 degrees
Melt butter in a large skillet over medium heat
Add squash and onions and saute until onions are translucent
Transfer to a large mixing bowl and add cheeses, sour cream, and green chile Season with salt and pepper to taste
Gently mix until well combined and transfer to a lightly oiled baking dish
Mix topping ingredients and sprinkle over casserole
Bake uncovered 20 minutes, until golden brown
Garnish with chopped parsley
