Ingredients: 1 tablespoon butter 1 tablespoon flour 1 1/2 cups chicken broth 1/2 cup Roma tomatoes diced 2 tablespoon white onion, finely minced 3/4 cup Hatch Green Chile 2 cups chicken cooked and shredded 15 ounces ricotta cheese drained 2 eggs lightly beaten 1 cup cheddar cheese shredded 9 lasagna strips 1 cup crumbled Cotija cheese 2 tablespoons green onions chopped 1 teaspoon fine sea salt 1/2 teaspoon ground black pepper 1 tablespoon garlic powder Instructions: Preheat oven to 350 degrees. In a medium saucepan, melt butter. Add flour and whisk together until a light brown roux forms. Add chicken broth and bring to a low boil. Add diced Roma tomatoes, Green Chile, and chicken, stirring to combine and heat, approximately 5 minutes. In a medium mixing bowl, blend together ricotta cheese, eggs and shredded cheddar cheese. Coat a 9-inch pan, or other deep dish pan, with cooking spray. Place a thin layer of sauce with the chicken on the bottom, top with lasagna noodles and then ricotta cheese mixture. Repeat 3 times, with last layer being ricotta cheese mixture. Cover with aluminum foil and bake for about 50 minutes. Remove foil and top with Cotija cheese. Return to oven until cheese melts.
