Hatch Honey Mustard Salmon

2 lb. side of salmon, boneless and skinless
1 Tbsp. parsley, chopped
1/3 cup Hatch Sweet and Spicy Mustard
1/4 cup honey
4 cloves garlic, minced
2 Tbsp. fresh lemon juice
1/4 tsp. smoked paprika
salt and pepper to taste

Preheat oven to 375 degrees F. Line a baking sheet with foil and spray with cooking spray
In a small bowl, combine mustard, honey, garlic, lemon juice and paprika. Stir to combine
Lay the salmon in the middle of the baking sheet and spread honey mustard sauce over top. Season with salt and pepper
Fold the sides of the aluminum foil up and over the top of the salmon until it is completely enclosed
Bake 12-15 minutes and remove salmon from the oven. Pull back the foil so that the salmon is exposed
Change the oven setting to broil and return the fish to the oven. Broil 2-3 minutes until cooked through
